Father’s Day. The third Sunday in June. Every year. Growing up…I never understood why there was a Mother’s and a Father’s Day, but there was never a Son’s or a Daughter’s Day. My mom’s response to my annual argument was always that every day was Son’s and Daughter’s Day. Lame. For the last 10 months I have been soliciting an Aunt’s Day. I have several friends’ kids who call me Aunt Lindsay…but I didn’t technically (biologically) become an aunt until almost 10 months ago. And that little girl…I would give my life for.
I have always been fortunate to be surrounded by good dudes. I have 2 brothers (one being a father) that would give their left arms for me (their right ones are too useful)…and a dad, Gaylon, whose unconditional love always prevails. And then The Swede came along. He’s not too shabby for blonde-haired, blue-eyed European who wears capri pants and a skinny tie. I love a man in a skinny tie. 😍
Dad and I kicked off Father’s Day
a few days early with breakfast at Mugs Cafe in Argenta. I had been there several times for coffee and a couple of times for lunch…but
never for breakfast. Dad had never been there. It wasn’t Cracker Barrel or McDonald’s, so it wasn’t on his radar. Per the barista’s suggestion…Dad got the breakfast burrito, and I got the breakfast tacos.

The breakfast burrito was definitely the winner. I ordered my tacos sans the cheese. As soon as I took the first bite…I regretted that decision. And I actually like pepper jack cheese. #healthydecisionfail I think dad missed the boat by ordering drip coffee. 😴 He’s a creature of habit. I have “regular” coffee every day at home…so when I go out to get coffee…I get fancy. ☕️💁🏼 My cappuccino was good. The only thing it was missing was the pretty little design that usually accompanies fancy espresso drinks. Aesthetics. Marketing 101.
As long as I can remember…my parents have always argued over who I look like. My dad says I look like him, my mom says I look like her…and The Swede says I look like neither.🤷🏼♀️ Looks or no looks…Here are some Gaylon-given traits…
- My love for sports (Nascar puts us both to sleep.)

Fine dining at Cracker Barrel. His fave. #CheapDate - My goofiness/wittiness (or lack there of)
- My fine, blonde-ish hair (flat, volumeless hair)
- My easy-going, laid-back personality
- My love for chips, popcorn, and most things sweet, sour and everything in between (many of my vices)
- My dislike for cheesecake and sour cream (Rotten, curdled milk…I still can’t wrap my head around it.)
- My love for coffee (It runs through his veins…)
- My love for oatmeal, cinnamon toast, and pb&j (Staples)
- His unwavering love and loyalty (Thanks, dad…for always being you.)
Because of him…Not only do I know who Bill Dance is…but I can also sing the theme song to the beloved fishing show that came on every Saturday morning…I can MacGyver my way in and out of most things (not just because I know who MacGyver is, but because I have watched every single episode that was ever made…at least twice)…and Walker Texas Ranger was once my hero. Chuck Norris! Don’t hate.
Happy Father’s Day to the guy who has been my #1 cheerleader for the last 34+ years. In honor of this special occasion…I have this amazingly awesome recipe to share with you. It started from this simple recipe that I saw on Pinterest and tweaked…..And then I had an ever better idea…
Lindsay’s Awesome PB&J-ish Dessert (Because every recipe of mine is awesome.)
Peanut Butter Oat Bars/Granola
2 1/2 cups rolled oats, 1 cup peanut butter (I use the Kroger brand, natural, crunchy), 1/3 cup honey
Follow the directions here. They are bars, but they crumble very easily into this awesome peanut butter granola. Top Halo Top Strawberry Ice Cream with this delicious peanut butter granola…and you have a healthy-ish, pb&j-ish dessert. You can use any strawberry ice cream (or vanilla…or chocolate [mmmm…Reese’s] for that matter). Make it. Try it. Share it. I wouldn’t. Love it. Annnndddd…tell me how it is.😋

- There is a 72-year-old grandma….from Arkansas (at least her grandson is)…that looked just like Scarlett Johansson when she was younger. Check this out. Possible P.M.T. interview?🤔
- Arkansas does it again. Check out this article in the New York Post. Peeing in Courthouse elevators?! Who does this? Arkansans. We should be so proud.
- Oh…and speaking of Jonesboro…5 out of the top 10 contestants in the Miss Arkansas Pageant were Red Wolves. And because A-State is mine (and my dad’s) alma mater…I’m throwing a shoutout! No, of course I didn’t actually watch the pageant.😴😆
- After the Brooks Koepka girlfriend/ex-girlfriend name mix-up…nobody is talking about how he actually won the US Open. Sorry Jena Sims…Team Becky with the good hair here…💁🏼
- For some time now…people have been telling me that I sound muffled when talking on the phone. I have finally figured out why….
